The Multipurpose Toddy Palm

Toddy palm is grown chiefly for its sweet sap called toddy. The sap is obtained by tapping the tip of the inflorescence called the spadix and is collected in earthen pots. The toddy ferments naturally within a few hours after sunrise and is used as a beverage or distilled to produce palm wine or arrack. To prevent fermentation, the collection-pots are coated with lime. This sap is then used to produce crude sugar or jaggery, molasses, and vinegar. Toddy palm is the national tree of Cambodia and it is said to represent the Khmer society.
